I’m on a never-ending quest to find healthy, fun foods to introduce to the household and for our Detox & Energize participants. The last few weeks, I’ve been perfecting my hummus recipe. It’s been a hit at the recent get togethers. This week, I changed it up.
- 1 can chickpeas
- 1/2 cup olive oil
- 1 lemon
- 1 lime
- 1 avocado
- 1 clove minced garlic
- 2 tsp cilantro
- black pepper to taste
Rinse and drain the chickpeas. I tend to take the outer shell off most of them as well. Puree in food processor. Move to blender. Chop and puree avocado. Move to blender. Add olive oil, juice of lemon, juice of lime, and the rest of ingredients. Puree till smooth.
Serve with gluten free chips, pretzel or even use as a filler for deviled eggs.
It came out very smooth. It must have been good because everyone took some home. Guess I’ll have to make more for us!
